
I have a love affair with coffee.
I refuse it is as bad for me as some people say.
It can't be!
Coffee is one of those ambiguous items-
For every article touting its health benefits,
it is countered by one disproving that theory.
It is revered as a world commodity,
and yet studied in the relationship with many medical illnesses.
I have always chosen the side of beneficial, obviously...
because I adore it.
I swear it enhances my life and gets my day going right.
Tastes so great,
fun to share with others the whole world over-
how can this be bad?
But there is one tiny thing I know
that I find it hard to deny:
(I am going to ignore the whole caffeine thing).
Coffee is very acidic,
and this is not good for our bodies.
The farming and ecological effect of farming coffee beans
on our earth and its precious resources
has changed a lot over the years, as well.
But- for now, I'm gonna stick to
organic, fair trade,
cold-pressed coffee.
Cold-pressed coffee is a method of preparing coffee
to remove the harmful acids.
I believe you can actually taste the difference,
and in our household
we affectionately refer to this coffee as
"Black Gold".
Go ahead and make yourself a batch.
You'll feel better and your body will be happier.
Acid-Free Coffee Extract
Add one pound of freshly ground, organic coffee
to eight cups water in a glass bowl.
Place mixture in a cool dark space
and allow to soak for sixteen hours.
Filter off liquid extract through a coffee or fabric filter
into a glass jar or pitcher that can be tightly closed.
Finished product is concentrated.
All you need is 1 or 2 tablespoons added to 8 oz of hot (or cold) water.
Keep extract sealed and in the refrigerator for up to two weeks.
